We wanted to take an innovative approach to our restaurant and create an experience you can’t get anywhere else -- and Absinthe Brasserie was born. The restaurant is Cecy Graf’s brainchild, combining absinthe and Cajun food in Seattle’s popular Belltown district. Our absinthe options are extensive. You can order flights or full servings.
